Ingredients:
Wholemeal pita bread, tin of diced tomatoes, tin of kidney beans, tin of sweet corn, small block of cheese. You can replace the tin of corn with a packet of frozen veges.

Cooking Instructions:
Blend tinned ingredients together in a bowl. Toast the pita bread (heat/warm up). Place desired amount of topping on each pita bread, sprinkle with cheese. Place under grill until cheese is melted & bubbling. Yummy!

Ingredients:
300g lean beef mince, 250g tin tomatoes, 100g tomato paste, 1.5 cups rice, 1 fresh tomato (diced), low fat parmesan cheese (to taste), salt & pepper (to taste), 1 cup water, 1 tsp oil

Cooking Instructions:
Brown mince in pan with oil over med/high heat. Turn heat down to lowand add diced tomatoes, paste, water and rice. Allow to simmer until rice is cooked and liquid is absorbed. Season to taste with salt, pepper and cheese. Spoon risotto into bowls. Sprinkle cheese and fresh tomato over the top and serve. Now enjoy your tasty and healthy Italian dish.

Ingredients:
250g lean beef mince, onion finely chopped, clove garlic, mixed herbs, sweet chilli sauce, 5 crusty bread rolls, lettuce leaves, tomato slices, canned beetroot, carrot & grated cheese.

Cooking Instructions:
Combine mince, onion, garlic, herbs and chilli sauce. Shape into 5 patties. Cook patties over medium heat for 8 minutes. Turn and cook for a further 5 minutes. Serve with bread rolls, lettuce, tomato, carrot, beetroot, cheese and extra chilli sauce.

ginger and chilli lamb stir-fry anonymous

Ingredients:
1/2 onion, 1 tsp garlic, 1 tsp ginger, lamb stir-fry strips or other meat, broccolini x 1, soy sauce, oyster sauce, fish sauce, lemon juice, stock cube, 1 x chilli, 1/4 packet of rice noodels or 1/2 cup rice.

Cooking Instructions:
Place noodles or rice to cook in boiling water for 12 minutes. In the meantime, heat pan and cook off onion, ginger and garlic. Then add the lamb strips, soy, oyster and fish sauce. Let simmer then add broccolini, lemon juice and stock cube. Let cook for 5 minutes or until rice is cooked. Chop up chilli, place to the side. Serve rice/noodles on base of plate. Spoon the stir-fry mix on top and sprinkle chilli over to finish.

Ingredients:
garlic, spring onion, white wine vinegar, mushrooms, chicken, tomato, olive oil, shortcrust pastry, sachet chicken cup-a-soup, basil.

Cooking Instructions:
Heat oil in pan and add crushed garlic, spring onion and diced chicken. Cook on high for 5 minutes so juices are flowing. Add mushrooms, a small handful of basil, 3 tbsp of the vinegar and the diced tomatoes. Season. Cook for further 5 minutes on high, meanwhile add sachet of soup to schooner of milk and stir. Pour contents of pan into a pie/cake tin and cover with soup mixture. Cover with 1 layer of pastry and brush with butter. Heat for approx. 20 minutes at 180 degrees. Serve with a salad and cold beer!

Ingredients:
2-3 zucchinis, 1 large onion chopped, 3 rasher of bacon chopped, 1 cup grated cheese, 1 cup SR flour, cup or so of corn kernels, 1/4 cup oil, pepper, 5 eggs, optional - add other odds and sods such as leftovers.

Cooking Instructions:
Thoroughly mix all dry ingredients (first 6 on list) in a large bowl. Mix or beat the wet ingredients - eggs, oil and pepper together. Mix the wet and dry ingredients all together and stir thoroughly. Bake 190-200 for 40-50 minutes or until browned. Be warned - you might want to pig out on this one... Enjoy!

Ingredients:
2 1/2 tablespoons of butter, 2 tablespoons of flour, 1 1/4 cups milk, 1 cup cheese, Pinch salt & pepper, 2 cups macaroni, 2-4 tablespoons of tomato sauce, Tin of tuna, Breadcrumbs, Vegie optional

Cooking Instructions:
Pre-heat oven to 180 degrees. Melt butter in microwave and stir in flour. Add milk and put back in microwave for 4-5mins till it looks like white sauce. Add cheese, salt & pepper to mix. In a different bowl cook macaroni for 10mins. Add to tomato sauce mixture. Combine drained tuna & macaroni. Pour into casserole dish, top with white sauce & breadcrumbs & put in oven for approx. 20mins.......Enjoy!

NOODLE A LA TUNA created by Ben Purdie

Preparation Time: 10-12 minutes

Total Cost: $4.50-$6.00

Ingredients:
Packet of spaghetti (or other pasta), Tin of tuna (lemon pepper), 4 packets of sweet chilli sauce , 4 packets of tomato sauce, Bowl of water, Pepper

Cooking Instructions:
Break about half a packet of spaghetti into a microwave bowl filled about half way with water. Microwave the spaghetti for 8 minutes on High, stirring after 4 minutes and again after the 8 minutes has elapsed. Drain the spaghetti and pour into another bowl. Open the tin of tuna and tip it into the bowl. Add the sweet chilli and tomato sauce. Using a fork, mix the ingredients together until they are all evenly distributed. Add pepper and serve.

Ingredients:
4 fresh ripe tomatos, salad onion/eschallot, fresh coriander, 1 fresh lime, avocado, (optional), tin/fresh tuna, tabasco sauce to taste, salt & pepper to taste

Cooking Instructions:
Ingredients can be adjusted to taste and number of serves depending on appetite. Dice the tomatos, onion/eschallots and avocado if using and place in a large serving bowl. Add tuna, coriander, lime and finally the tabasco, salt and pepper to taste. Mix all ingredients gently so as not to mash avocado and tuna. Serve with toasted pita bread, fajita wraps or similar and your favourite cold drink.

Cooking Instructions:
Mix avocado and cottage cheese together. Dice tomato and combine all ingredients. Spread on bread or toast. Salt and pepper to taste. Yum! Yum!

Ingredients:
2 thin leeks, 420g can corn, 425g tin tuna, 250g cream cheese, 500g pasta (large shapes)

Cooking Instructions:
Slice and wash leeks, let drain. Warm oil and fry leeks until soft. Drain tuna. Add corn and tuna to pan and let warm. Add the cream cheese and let it melt until ingredients form a sauce. Salt & pepper to taste and serve with pasta. Eet Smakelyk!

PUMPKIN LASAGNE created by Allison Randall

Servings: 4-6

Ingredients:
2.5 cups cooked pumpkin, 1 large tub ricotta cheese, 1 clove garlic, 1 onion chopped, 1 can whole tomatoes, 1 tbsp basil leaves sliced, 1 box instant lasagne sheets, salt & pepper

Cooking Instructions:
Mash cooked pumpkin and combine with onion, garlic and ricotta. Add salt and pepper to taste. Place half the mixture on lasagne sheets. Place remaining pumpkin/ricotta mixture on top of the sheets and again lay lasagne sheets over top. Finally, mix basil into can of tomatoes and rougly chop whole tomatoes. Add this mix on top of lasagne sheets. Cover with aluminium foil and place in a preheated oven set at 180 degrees for 30 minutes. Remove foil and allow to cook for a further 15mins.

VERY EASY CHICKEN STIR-FRY created by Chris Hill

Ingredients:
600g chicken breast strips, 1 tsp oil, 1 carrot, zuccini, 1 stalk broccoli, red capsicum, 1 tsp garlic, 1 tsp ginger, 1 tbsp soy sauce, 1 tsp sugar, 1 tsp chicken stock powder, 1 tbsp water

Cooking Instructions:
In a large wok or frying pan, fry off chicken strips until just cooked, set aside. Fry off vegies to desired crispness and add chicken back to pan. Add seasoning and water, toss well. Serve with rice or noodles.

Ingredients:
1 packette of 2 minute noodles, 4 eggs, 1 onion (diced), 1/4 cup of milk, 1 sprig of parsley (cut to flakes), 2 rashes of bacon, 1/2 cup of grated cheese, 1 tablespoons of margarine

Cooking Instructions:
1. Cook noodles as per instructions on packet (except do not add flavour)
2. Beat eggs and milk until fluffy.
3. Add onion, diced bacon and parsley and sachet from noodle packet to egg mixture.
4. melt margarine in frypan. (low-medium temp)
5. Pour in mixture and add grated cheese on top of nixture
6. Cook until set
7. Serve with bread and glass of red wine!

CREAMY BACON & VEGE SPAGHETTI created by Ian Jones

Ingredients:
1 packet spaghetti, 1 can sliced mushrooms, 1 packet diced bacon, 1 egg, 1/2 cup light cream, 1 cup frozen mixed veges, 2 tbsp oil

Cooking Instructions:
While cooking spaghetti fry bacon and mushrooms for 5 minutes. Beat the egg and cream together. When spaghetti is ready drain and return to the pot, adding frozen veges. Mix cream and egg with no heat and mix through spaghetti with oil. Stir continuously to keep egg from cooking to bottom. Add bacon & mushrooms. Stir and serve.

Ingredients:
1 chicken breast, diced, 200g mushrooms, sliced, 1/2 red capsicum, finely diced, 100g green beans sliced, 2 tbsp basil pesto, 200g penne pasta, cooked until tender, 1/3 cup light cream with 3 tsp flour stirred in, salt & pepper to taste, olive oil to fry

Cooking Instructions:
Brown chicken in olive oil. Add capsicum, mushrooms and beans, 1/3 cup water, salt & pepper and basil pesto. Simmer about 10mins. Add cream and flour mix, stir over low heat until thickened. Add cooked pasta, stir sauce through. Serve with grated parmesan or tasty cheese if desired. Enjoy!

PAWPAW IN THE SHELL created by Amelie Mechenin

Ingredients:
1 large pawpaw, juice of half a lemon or lime, 4 tbsp milk, 1 egg, 2 tbsp grated cheese, 2 tbsp breadcrumbs

Cooking Instructions:
Cut the pawpaw in half lengthways. Scoop the flesh and put it aside. Warm water in a pan, add the juice of a lemon. Once the water is boiling, add the pawpaw and cook for 15mins. Drain well and mash cooked pawpaw (drain excess water). Add warm milk and beaten egg to the mash (add some cheese if you like into the mash!). Divide the mash in two and fill the 'pawpaw shell'. Sprinkle each with breadcrumbs and cheese. Cook 10mins in a preheated oven (200C) or until golden on top. Bon apetit!

LEMON GARLIC CHICKEN CREME created by Jesse Bright

Ingredients:
2 skinless chicken breasts, homebrand philly cheese, 1 lemon, 4 cloves garlic, toothpicks from Refec

Instructions:
Slice the chicken thinly so you have flat slabs of chicken. Crush the garlic and combine with lemon and philly cheese until you have a toothpaste consistency. Coat the chicken slabs in 'toothpaste mix' and roll (this is the tricky part) then spear with a toothpick. Heat oven to 200c and bake for 15mins. Check that chicken is cooked (cheap campus ovens may take longer) and serve with salad.

Ingredients:
Lamb meat 500g, satay sticks (10), sweet soy sauce (3tbs), salt and pepper, peanut butter (1tbs), corriander powder (1tbs), palm sugar,crushed (2tbs), Butter (1tbs)

Instructions:
Cut lamb 2cm x 2cm. Mix lamb with sweet soy sauce, salt, pepper, peanut butter, palm sugar, coriander & butter. Put the lamb on satay sticks (approx 5 pieces/stick) and leave them for 15-30 minutes before grilling, or you can grill them straight away. Serve with salad and rice or bread.

Ingredients:
Crust: 2 eggs , 1/4 cup flour, 1 cup milk, 2 tablespoons margarine
Fillings: chopped bacon, diced onion, grated cheese, tomato slices, grated zucchini, corn niblets

Instructions:
1. Mix eggs, flour, milk and margarine together.
2. Pour into small pie dish
3. Add choice of fillings
4. Bake in pre-heated oven of 220 degrees celcius for 10 mins
5. Reduce heat to 180 degrees and bake for futher 15-20 mins

Can be served alone, with hot vegetables or a salad

Ingredients:
1 banana, 1 egg, 2 tsp wheatgerm, 5mL vanilla essence, 3 tbsp of yoghurt, 500mL of skim milk, 2 dessert spoons ice-cream (optional)

Cooking Instructions:
1. Peel banana and put in blender
2. Crack egg and put in blender
3. Place all other ingredients in blender with banana and egg (ice-cream is optional)
4. Blend all ingredients together until desired consistency

Ingredients:
1 lb boneless skinless chicken breast cut into chunks, 4 oz sliced mushrooms, 4 oz sliced carrots, 2 oz peas, 4.5 oz water & 1 package long grain and wild rice mixed with herbs

Cooking Instructions:
Cook chicken on medium heat in a large heated skillet for about 5 minutes (until chicken is no longer pink in the centre). Stir in all remaining ingredients. Heat to boiling then reduce heat to low. Cover skillet for about 15 minutes (stirring occasionally). Finally uncover and cook for an additional 3 minutes or so until the carrots are tender and the water is absorbed.

Ingredients:
Fajita Bread, Dolmio Sauce, Mushrooms, Cheese

Instructions:
Put the fajita bread on a plate, spread some dolmio sauce over it, roughly chop 2 mushrooms and cover the sauce. Finally, grate some cheese over the top. Slide the pizza onto a sandwich press and leave cook for 3 minutes. At least 8 pizzas can be made from the ingredients. Yummy!

5 potatoes, 1 onion, 3 rashers bacon, salt & pepper, oil

Instructions:
Boil unpeeled potatoes for 10 mins. Peel and allow to cool. Shred potatoes. Dice onioins and bacon and saute in oil. Mix together onions, bacon, potato shreds, salt & pepper. Shape into small flat patties. Fry or bake until golden brown.

SWEET CHILLI STIR FRY anonymous entry

Ingredients:
500g pork cut into strips, 1/2 tsp crushed garlic, 1/2 tsp crushed ginger, 1 tsp oyster sauce, 2 tbsp sweet chili sauce, 1 tsp soy sauce, Frozen/fresh vegetables, 2 tbsp cornflour & 500ml water, salt, pepper & olive oil, sliced onion

Cooking Instructions:
Place olive oil in pan, when heated added the sliced onion. Cook until a golden brown colour. Add the pork strips and cook until brown or cooked. Add in the sauces, garlic and ginger and stir. Place the chopped vegetables into the pan, cooked until soft. Thicken with the corn flour mixture. If desired, to thicken the sauce more, gradually add more corn flour until it is thick enough. Season with salt and pepper. Serve with either rice or noodles of your choice.

Tofu, capsicum, kidney beans, onion, jalepeno pepper (optional), taco seasoning pkt, taco shells (10), can diced tomatoes, 1/2 cup rice

Cooking Instructions:
Saute onion in oil over medium heat until slightly browned. Add chopped capsicum & jalepeno. Saute for about 3 mins. Add can tomatoes, beans, cubed tofu, rice and taco seasoning; simmer for 30 minutes over low heat. Good way to know that its done is when the rice is cooked. Serve with taco shells and any toppings (eg. lettuce, cheese).

LEBANESE PIZZA BREAD anonymous entry

Ingredients:
lebanese bread (wholemeal), tomato paste, cheese, capsicum, onioin, corn & mushrooms

Cooking Instructions:
Put the lebanese bread into the grill and toast it on both sides for about 20 secs. Then evenly distribute some tomato paste with spices (salt+pepper+basil+oregano). Then just top it with whatever you like. For example tomato, capsicum, onions, corn, mushrooms.. and put some cheese on top and place it back in the grill for 1 min... and FINISHED... mmm very yummy flatbread pizza for about 2 dollars!

CREAMY GARLIC CHICKEN RICE by Ryan Gahagan

Ingredients:
2 chicken thigh fillets, 2 cups rice, 250mL low fat cream, 3 tsp crushed garlic, 2 tablespoons margarine, 1 small onion

Cooking Instructions:
Cook rice in microwave or any other preferred method. While rice is cooking, melt margarine in a pot and add diced onion and 2 tsp garlic. Once the onions are heated through add the diced chicken and cook on medium until cooked through. Add cream and another tsp of garlic. Simmer on medium for 2-3 mins. Pour cooked rice into mixture and simmer for a further 2-3 mins while rice absorbs cream. For extra flavour and health add in 250g frozen stirfry vege's when chicken is added.

Cooking Instructions:
Dip the papad in water, make it a little wet. Boil the potatoes, grate them and combine with the remaining ingredients. Roll the mixture in the papad and deep fry.
